Essential elements for health -II

Hi friends,

We are again back. Let us discuss more about Vitamins. A brief description of Vitamins is as follows:

Vitamin 'A'- Retinol (Antixerophthalmia Vitamin; growth Vitamin):

Vitamin 'A' in its complete and pure form can be obtained only from animals. However its pro Vitamin known as carotene, is available in large quantity from vegetables. Vitamin 'A' is useful to the body in various ways:

1. It is necessary for the process of metabolism occuring in every cell of the body.

2. It is necessary for the growth of the body.

3. It is essential for eye-sight. Deficiency of Vitamin 'A' causes night-blindness.

4. The most serious symptoms due to its lack are drying up of the skin, teeth troubles, the burning of mucous membrane, the loss of weight and kidney stones appearing in the urinary tract.

5. The vitamin 'A' deficiency causes diseases like swelling of the body, excessive increase of uric acid in blood, anemia, development of respiratory infections and infections of the ears and nose.

Green leafy vegetables, cabbage, red and yellow fruits and vegetables contain Vitamin 'A' in sufficient quantity. This vitamin is fat-soluble. So it cannot be assimilated completely if the food lacks in fat. The body has a reserved quantity of fat which assists the assimilation of vitamin 'A'. Vitamin 'A' is stable to heat but if exposed to continuous high temperatures over 100 degrees centigrade, it is destroyed.

Vitamin 'D' :

Some substances have a quality to prevent rickets, a disease of children. These substances which resemble the secretions of adrenal cortex are called sterols. Some of these substances when come into contact with ultra violet rays, turn into Vitamin 'D'

7- dehydro cholestrol lying in the human skin is converted into vitamin 'D' when come into contact with sun-rays. Thus the human body itself is able to produce vitamin 'D'. It is found in milk. It is fat soluble. It is not affected by moderate heat or oxygen in the atmosphere.

Vitamin 'D' is essential for the health of bones and the teeth. It is needed for the proper utilization of calcium and phosphorus. The deficiency of vitamin 'D' causes rickets in children. In this disease, the bones become soft, the spinal column and the bones of the arms and legs bend and the teeth suffer from caries. This ailment in persons of advanced age is called 'osteomalasia'

Vitamin 'K' :

By conversion to prothrombin in the liver this vitamin maintains the normal rate of blood coagulation by regulating the prothrombin level. Vitamin 'K' is also fat-soluble. It is sparingly soluble in water.

Vitamin 'K' is found in green and fresh leafy vegetables. Moreover, it is manufactured in the intestines by the bacterial flora that inhabits this organ. The deficiency of vitamin 'K'' causes poor clotting of blood and hemorrhagic tendencies.

Vitamin 'C' (Absorbic acid):

Absorbic acid is one kind of sugar which is very much useful for the body. It bestows youthfulness and efficiency in work. It is essential for the health of the teeth, the bones and the gums. It strengthens the arteries, prevents hemorrhage and promotes healing of wounds. It is necessary for blood metabolism and thus useful in anemia. This vitamin is considerably destroyed by heat. It is water soluble, hence the water used for cooking vegetables should not be discarded. The human body itself cant produce this vitamin.

The deficiency of vitamin 'C' in the body causes a disease called scurvy. Moreover, this deficiency also causes tooth-decay, gum troubles, rarifaction of bones, loss of weight and infertility.

This vitamin is found in citrus and sweet fruits and green leafy vegetables. Though potatoes contain a small amount of vitamin 'C', their large consumption supplies sufficient vitamin 'C'.

Vitamin 'B':

The vitamin 'B' complex is composed of many constituents. They include thiamine, niacin, riboflavin, pyrtidoxin, folate and B12. There is another complex containing constituents such as choline, pantothenic acid, biotine, inositol, p-aminobenzoic acid (PABA), panguamic acid and amygdalin (laetrile). The function of these latter constituents remains still unknown.

Vitamin 'B' complex is water soluble and very useful to the body.
